Beef Kaldereta

Beef Kaldereta is a beef stewed in tomatoes, each household in the Philippines has their own version in preparing this delicious dish. Some calls for tomato sauce, garbanzos, olives and other ingredients. My version of Beef Kaldereta has been evolving since I first made this dish.

I remember preparing Kaldereta for the first time and all my ingredients were the basic ones. Soon, I was brave enough to explore more ingredients. As of writing this is still the recipe I use in preparing my Kaldererta. Most people avoid cooking Kaldereta as it takes so much time to get the meat tender. But when you get the perfect tenderness, everyone’s going to love your Kaldereta!

Let’s start cooking!

What you’ll need:

1 kg Beef Cubes (Preferably the one’s with fats – easier to tenderize)

3 Pieces Potato (Cubed)

2 Pieces Carrots (Cubed)

1 Large Onion (Chopped)

4 Cloves Garlic (Chopped)

1 Red/Green Bell Pepper (Cubed)

6-8 Pieces Tomatoes (Seeds removed – Chopped)

1 Small Liver Spread

1 Cup frozen Green Peas

3 Tbsp. Soya Sauce

3-4 Tbsp. Olive Oil

3-4 cups of water (Beef Broth)

1 Beef Cube (Optional)

1 Cup Shredded Cheddar Cheese

Salt and Pepper

Lets get it on!

1.) Flavor your meat with soy sauce and salt and pepper.

2.) In a deep pot, heat oil and by batches brown your beef Cubes. (Once done set aside)

3.) In the same pot, heat your olive oil and saute your garlice and onions.

4.) Add your tomatoes and saute for 5-8 minutes or until the tomatoes becomes soft.

5.) Add your beef broth or water and bring to boil.

6.) Return your beef cubes on the pot and continue to boil (If you have a pressure cooker, you can use it and cook for 40 minutes)

7.) After an hour and a half of cooking, add your liver spread.

8.) Continue cooking for 30 more minutes then add your shredded cheese.

9.) After 10 minutes add your potatoes and carrots.

10.) Cook for another 15-20 minutes then add your bell pepper.

11.) Cook for another 5 minutes and serve!

Your beef Kaldereta is now ready to serve! Bring some for your friends and see them smile with excitement. Or better cook this for the family and have a happy tummy after dinner.

This recipe serves 6-10 persons.
