Firecracker Shrimps

Look at that picture, just look at it for a moment! Don’t they look lovely? They actually tastes as good as they look. Some people even asked me if I ordered it somewhere. Nope, I made it and I am very proud to say that. Why? Because it not really a very easy dish to prepare. I mean in my opinion the preparation of the shrimp got me tired.

As I was frying these beauties I was actually praying that they’d come out beautiful and taste amazing. It didn’t fail me, they are really good. To all Seafood lovers out there, try this recipe and impress your family and friends.

Let’s get it on!

What you’ll need:

20  Large Shrimps (tail on – deveined)

10 Spring roll wrappers (Large Sizes – cut diagonally in the middle to make 20 Wrappers)

2 Tbsp. Sweet Chili Sauce (Add more for dipping)

3 Tbsp. Peanuts (Chopped coarsely)

2 Stalks of Spring onion (Diced)

2 Tsp. cornstarch mixed with 2 tsp water

Oil for Frying

Let’s start cooking!

1.) Lay your shrimp on a chopping board and slice it from the inside to straighten it up. Prolly 5-7 slices.

2.) Lay your shrimps on a plate and brush the meat side with the sweet and spicy sauce.

3.) Lay your spring roll wrapper with the top of the triangle on the left side.

4.) Lay your shrimp on the bottom end of the wrapper, add some peanuts and spring onion.

5.) Slowly roll the wrapper upwards (make sure its tightly wrapped), halfway through the wrapper, tuck the top part and continue rolling. spread some of the cornstarch mix on the tip before sealing.

6.) Preheat the oil and start frying by batches. This only take 3-5 minutes to cook.

7.) Lay on paper towels to remove the excess oil.

Serve hot and enjoy with your family. This is definitely a show stopping appetizer that will surely amaze your family and guests. Serve it with some sweet and spicy sauce.
