Eggs in Purgatory with Meatballs 

I was supposed to prepare Chicken Alfredo last night, unfortunately the chicken I bought turned out bad. I only had an hour to prepare dinner, and to be honest that is a lot of time. I looked at my fridge and I only had a frozen whole chicken, some slices of pork belly and two boxes of store bought Meatballs (Beef). I also had mozzarella and parmesan cheese in the fridge. Then I remembered a dish I prepared a couple of months ago.

Inspired by a youtube celebrity’s (Laura Vitale) Eggs Purgatory, I decided to put a twist on her dish. Last time I made this dish I used minced pork, this time I decided to try meatballs. I wasn’t expecting an amazing dish, as this was an impromptu meal. But guess what? Everyone at home loved it, they also brought some to work the next day and everybody who tried it only gave positive feedbacks.

Let’s get it on!

What you’ll need:

2 Packs Meat balls (Store bought around 8-12 pieces per box)

500 g Tomato Sauce (Your brand of choice)

3 tbsp. Oil

1 Medium size Onion (Chopped)

3 Cloves Garlic (Chopped)

1/2 cup sliced mushrooms (I used the canned one)

1/2 cup Mozzarella

1/4 cup Parmesan cheese

5 Pieces Eggs

1 tsp. Paprika

Salt and Pepper

Let’s start cooking!

1.) Heat your frying pan (preferably a deep one), Add your oil and Meatballs. Fry until it turns brown.

2.) Remove the meatballs and place on a plate with paper towels.

3.) In the same pan, saute your onions and garlic.

4.) Add the meatballs back and the tomato sauce.

5.) Add the mushroom and let it simmer for 3 minutes.

6.) Lower your heat and add the Mozzarella and Parmesan Cheese.

7.) Break the eggs one by one and add it on top of the cheese.  (Make sure to leave some space from each egg).

8.) Cover the pan and let it simmer for 8-10 more minutes.

9.) Add the salt and pepper. (I also added some sugar as my tomato sauce was a bit tangy).

Voila! Your Eggs in Purgatory with meatballs is done! You can also substitute the meatballs with minced meat or bacon. Try this easy dish and let me know what you think. My family loved it, I’m pretty sure yours will too.
