Creamy Pasta with Squid

 

Over the weekend my sister went to her dentist for teeth bleaching. This meant that she won’t be able to eat any meal that could stain her teeth for the next 5 days. I took this as a challenge to prepare something colorless or white based sauce meals for the next 5 days.  So far so good I would say, but it hasn’t been a smooth ride. Were on our third day and I was already tired of the colorless food. The first day of my week  long challenge, I decided to experiment and prepare a pasta with squid.

I already visualized the dish on my mind the entire day, I wanted to use thick spaghetti pasta. Unfortunately it wasn’t available at my local grocery. I ended up using what was available at home. The sauce was one of the easiest sauces I have ever prepared.

Let’s get it on!

What you’ll need:

3 handful of uncooked pasta (Cook as per package)

1 lbs. fresh squid (Cleaned and cut into 2×2 inches cube)

1 cup Thick Cream

1 cup water

1 tbsp Olive oil

2 tbsp. Butter

2 tbsp. Minced Garlic

2 tbsp. Lemon Juice

1 tbsp. corn flour mixed with 3 tbsp. water (I use this to thicken my sauce)

2-3 tbsp. of Parmesan cheese (Or as much as you want)

Salt and Pepper

Let’s start cooking!

1.) In medium heat, add the butter and olive oil  on your pan and saute the garlic.

2.) Add the Squid and saute for 4 minutes.

3.) Add the water and cream and mix for 3 minutes.

4.) Add the lemon and stir for a minute.

5.) If the sauce is not thick enough add the corn flour mixture (add 1 tbsp at a time).

6.) Add Salt and Pepper.

7.) Prepare your pasta in a plate and top it with the creamy sauce. Then sprinkle some Parmesan cheese on top.

Who would have thought that you can still prepare delicious meals even if it doesn’t have too much color in it.  You can squeeze fresh lemon juice on top and mix it. You won’t believe how tasty the dish is. I also brought some for lunch the next day. I was afraid it would stink the entire office, to my surprise it didn’t smell. My colleague’s were actually asking me what I had for lunch, and when I said Pasta with squid they just said: We couldn’t smell the squid.

This recipe was good for 4-5 adults.
