Shrimp Egg Rolls

I always loved Firecracker Shrimps, the only thing I don’t like about it is the preparation. I always use fresh shrimps, therefore I have to peel each of the shrimps and devein them. I just love the taste of fresh shrimps, the frozen processed shrimps just doesn’t taste as good. Over the weekend I wanted to cook Firecracker shrimps, then I got lazy. So I figured why not stuff the shrimp meat in the egg rolls and just fry em? Easy, right? Instead of the normal ingredients for the firecracker shrimps, I also added carrots, egg and corn flour.

We had guests coming over that weekend for dinner and I thought I’d give it a try.  I was a bit scared at first, but after frying one roll I knew this was going to be a hit. Did I mention that all you have to do is mix all the ingredients and wrap it on a spring roll wrapper? Try this easy recipe:

Let’s get it on!

What you’ll need:

1 Lb Fresh Shrimps – Deveined and chopped to small pieces

1/2 of a Carrot – Grated

1 Red Onion – Chopped finely

3 Cloves of Garlic – Chopped Finely

2 Stalks of Spring Onion – Chopped

1 Tbsp. Lemon

1 Piece Egg – Beaten

3-5 Tbsp. of Corn Flour

2-3 Tbsp. of Peanuts – Chopped coarsely

Salt and Pepper

1 Pack of Spring Roll Wrappers – Sliced in the middle to form a triangle

Oil for Frying

Water to seal the Rolls

Let’s start cooking!

1.) Mix all ingredients in a bowl and mix well, cover with cling wrap and set aside for 10 -15 minutes.

2.) Take 1 tbsp. of the mixture and wrap on spring roll wrappers, tap water on the end of the wrapper to seal.

3.) Heat the oil on your fryer or frying pan (Medium heat).

4.) Fry the Spring Rolls by batches (Depending on the size of your pan) this will take 3 minutes per side or until the wrapper turns brown.

5.) Rest on paper towels and serve with Sweet Chili Sauce on the side.

 

I wasn’t really expecting everyone at home to like the Shrimp rolls, but it became the star of the night. Everyone at home loved it, even our guests loved it. I’m very confident that your family’s going to love this, try it at home and let me know what you think.
